Originals are hard to come by; they are seldom tried & true, and they are known to hide by instinct.
- I have been eating around the East End since the early eighties. Back then Tom Schaudel made his presence known in Montauk at his Downtown Grille & Wine Bar - he still is an original in my mind.
- The Montauk Yacht Club has always been a Carl Fisher original, now it’s home to a new East End Original: Jeremy Blutstein and his Showfish Restaurant.

Pair an über talented Chef with the freshest produce East End Farmers have to offer, then add the daily catch from Montauk’s commercial fishing fleet, and you have a formula for delicious.
- About those farmers: Blutstein has created a network of friends who farm. Simply said, he is close to his food sources, and understands how they practice their art and bring the very best to his back door.
- About the fish: the term 'Day-Boat' comes to mind - fish caught within 20 miles or so from Montauk. What you see at the seafood display was in the water the morning of your dinner.
How does all this translate when building the Showfish Menu? Chef says every item on the menu has a story behind it, part of which is that the source is notated next to each menu item. That translates to: tonight's menu is driven by today’s availability and is subject to change at the last minute. The kitchen brigade needs to be imaginative and conceive menu adjustments just before the dinner menu goes to print! Talk about a pressure cooker...

Montauk is the largest seaport on the East Coast and one would think that the 'big-fish' concept would be observed throughout the restaurants of the East End. That is not the case! Although excellent seafood may be found elsewhere Out East, Showfish again proves itself to be an Original as the only true casual fine dining fish-house!
