‘Carolyn's Kitchen’ What I am thinking about this week

What better way to relax then with a Lavender Lemonade on our front porch in the middle of summer?
1 cup Hamptons Honey
5 cups filtered water
1/4 cup fresh Balsam Farms lavender blossoms, crushed
1 cup fresh-squeezed lemon juice
Bring 2 1/2 cups water to boil in a medium pan
Remove from heat and add honey, stirring to dissolve.
Add the lavender to the honey water, cover, and let steep at least 20 minutes or up to several hours, to taste (this syrup can be made ahead and stored in the fridge)
Strain and pour infusion into a glass pitcher
Add lemon juice and another 2 1/2 cups of cold water.

In addition to an amazing aroma and flavor, lavender is believed to have medicinal properties such as relief from stress, headaches, nausea and insomnia.
Balsam Farms is one of my favorite places to stop by during the summer months. Recently Farmer Ian introduced me to Ellen Watson, an East End Photographer who brings the magic of the fields to us through her photography. She shared some of her photos of this year's lavender and, as she said, 'The Lavender was AMAZING this year; it seemed to be more abundant and fragrant than ever!'
